Hunter Valley Sunflowers at Largs is a solid standout for its longer season and simple entry-plus-per-stem pricing. Because these are genuine paddock blooms rather than a controlled greenhouse crop, opening dates depend on rain and heat and are usually announced only a week or two ahead, so check social media before setting off.

There are two main areas: the Central Coast around Jilliby, Somersby and Peats Ridge, which grows sunflowers and mixed cut blooms including dahlias and zinnias, and the Hunter Valley itself around Largs and Medowie, which is almost entirely sunflower paddocks. Both are within striking distance of Newcastle, so it's easy to build a day trip around whichever cluster suits your route.
The Hunter Valley farms at Largs and Medowie are the closer option, roughly 45 minutes to an hour from central Newcastle. The Central Coast cluster around Jilliby and Peats Ridge is further, closer to 90 minutes, since it sits nearer Sydney than Newcastle. Either way it's a manageable half-day round trip rather than an overnighter.
Central Coast sunflower fields generally bloom from August through December, while the Hunter Valley farms run a longer window from November to May, peaking January to March. Because both areas are true paddock blooms, exact opening weekends move with the season's weather and are usually confirmed via the farm's social media only shortly beforehand.
Most of these are informal cut-your-own days rather than ticketed experiences, so you typically just turn up during the announced opening window and pay entry plus a per-stem fee on arrival. A few run occasional festival-style event days that are worth checking for in advance, but day-to-day picking rarely needs a formal booking.
